Why does my Stripe revenue not match my bank deposits?

Because it shouldn't. Stripe deducts processing fees before paying out, and batches charges into payouts on a delay, so a $1,000 day in Stripe might arrive as $971 two days later. Recording only the deposit understates both your revenue and your expenses.
