Why does an unpaid bill matter to my books?

Because it's already an expense and already a liability. Under accrual accounting, an invoice dated 3 March is a March expense even if you pay it on 2 April. Recording only the payment shifts that expense into the wrong month and hides what you owe in the meantime. Investors and your CPA both expect to see payables on the balance sheet.
